Prepare steak

Our Consumer Test Kitchen experts recommend seasoning your steak based on the cut of meat you’re grilling. For classic grilled steaks like boneless rib eye, New York steak, or sirloin, which are very tender and cook faster than other steaks, a dry rub or salt and pepper will give you the best flavor. For tougher cuts, such as skirt steak or flank steak, marinate the meat in the refrigerator for 2 to 4 hours before grilling.

Preheat grill

For the best sear results, make sure the grill is hot. You should preheat the grill on the SEAR setting for 10-15 minutes, or until the ready light comes on (if your model has one). Once preheating begins, immediately remove the steak from the refrigerator and place on the counter. Since the steak is cold out of the refrigerator, heating it a little will help it cook more thoroughly. Be careful not to leave it for too long (less than 2 hours is best) and always follow food safety guidelines.

Cook steak

Cooking times may vary depending on the cut of steak, thickness, and the starting temperature of the steak and grill. Consider this helpful guide: For New York steak (1-inch thick), grill at 450°F for 8 to 16 minutes, or until your desired internal temperature is reached. If you are using a grill with only one cooking surface, turn the steak once during cooking. If you use an indoor grill with two cooking surfaces, reduce the cooking time to avoid scorching.

Take temperature

To cook your delicious steak to your desired pink color, check the temperature. Insert a digital instant-read meat thermometer into the thick center of the steak. The USDA recommends cooking steak to a temperature of at least 145°F and letting it rest for at least three minutes. For reference, a 1-inch rib eye steak takes about 6-7 minutes to reach medium rare (about 160 degrees Fahrenheit). After the steak is removed from the grill, let it rest for 5 to 10 minutes before eating. For food safety, the USDA recommends resting steak for at least three minutes after cooking it to a minimum of 145°F, but our Consumer Test Kitchen experts prefer to let it rest longer for optimal flavor. During this time, you can cover it loosely with foil to absorb the heat.

Alternative: Sear the steak

Reverse grilling is a cooking technique that produces steak-quality results at home. The process involves cooking the steak low and slow in the oven or grill until the desired internal temperature is reached. Then, sear the steak on both sides. This cooking method keeps the meat moist and tender, while the final sear adds texture and flavor from edge to edge. Reverse searing is especially beneficial for thicker cuts of meat, as it helps ensure the inside reaches the desired doneness while achieving the perfect brown and sizzling crust on the outside.
