How to Make Taco Skewers

Start by marinating the peppers in adobo sauce, garlic, lime juice, vegetable oil, salt and pepper. Marinating allows the meat to absorb flavors, resulting in a more complex, rounded flavor. It also helps tenderize the meat, making it more juicy and juicy when grilled.

Once marinated, alternate meat and vegetables on skewers. Remember to leave a little space around each skewer to ensure it cooks evenly and thoroughly. If your skewers are made of wood such as bamboo, soaking them in cold water for 10 minutes before using is the secret to preventing them from burning on the grill.

Next, you’ll remove the skewers from the grill and add the tortillas, one at a time. They take just seconds per side to prepare grilled meats and vegetables. Garnish with fresh cilantro, cotija cheese, a dollop of fat and a final squeeze of lime juice for a delicious kick.

Grilled Taco Skewers (Chicken, Beef or Pork)

  • 1/4 cup jalapeños in adobo sauce, roughly chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh lime juice
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 pound boneless, skinless chicken thighs, sirloin, or pork tenderloin, cut into 1-inch pieces
  • 8 ounces cherry tomatoes
  • 1 red bell pepper, seeds removed and cut into 1-inch pieces
  • 1 yellow bell pepper, seeds removed and cut into 1-inch pieces
  • 1 large poblano pepper, seeded and cut into 1-inch chunks
  • 1 white onion, cut into 1-inch pieces
  • 8 (10-inch) metal or wooden skewers
  • 4 6- to 8-inch tortillas
  • 2 tablespoons chopped cilantro, divided
  • 2 tablespoons crumbled Cotija cheese, divided
  • 2 tablespoons Mexican fat, divided
  • 1 lime, quartered

  1. In a medium bowl, combine chiles with adobo sauce, garlic, lime juice, vegetable oil, salt, and pepper. Place mixture into a gallon-sized resealable bag and add meat. Refrigerate for 8 hours or overnight.
  2. Preheat grill to 400°F.
  3. Open the resealable bag and add the vegetables. Close the bag and shake well to coat the vegetables with the marinade. Drain and discard marinade from meat and vegetables.
  4. Alternate skewers of meat and vegetables, leaving a little space around the meat.
  5. Grill for 10 to 12 minutes, turning halfway through, until meat is cooked through.
  6. Remove kebabs from grill and place on a plate.
  7. Place the tortillas one at a time on the grill and grill for 20 to 30 seconds on each side. Remove and place on a plate.
  8. Remove meat and vegetables from skewers and place on tortillas. Garnish with ½ tablespoon cilantro, Cotija cheese, crema and a squeeze of lime juice.
