Today I’m back with three very quick, fresh and super successful ideas for assembling lettuce leaves in Korean ssam style. Nut butters provide the star flavor: they deliver creaminess, flavor, and a nutrient-dense texture that transforms a simple bite into something… shocking! I have used the Natuvid brand and they are 100% natural, gluten-free, no added sugar. They have a wide variety of products (cashew, almond, hazelnut, peanut, pistachio…just to name a few) and you can purchase their nut butters on their website.
Ingredients for 12 ssams (4 of each flavor)
- 12 large, firm lettuce leaves.
- 1. Mediterranean Sam
- 200 g cooked chickpeas, drained.
- 1 medium carrot, grated.
- 10-12 cherry tomatoes, quartered (or 1 tomato diced).
- 2 tablespoons Natuvid Cashew Cream.
- 1-2 tablespoons water (to adjust texture).
- 1 teaspoon lemon juice.
- salt and pepper.

- 100g of shiitake mushrooms (or whatever you have), drizzle in oil and sauté for 3-4 minutes.
- 1/2 cucumber, cut into thin strips.
- 1 cup purple cabbage, shredded.
- 2 tablespoons Natuvid peanut, cashew, almond and hazelnut butter.
- 1-2 teaspoons soy sauce.
- 1-2 teaspoons lime juice.
- 1-2 tablespoons water (salted).

- 1/2 crisp apple (green apple type), diced.
- 4 fresh figs, sliced (or dried and chopped).
- 50g crumbled feta cheese.

- Wash, dry and reserve the whole lettuce leaves. The drier it is, the crispier it will be.
- Open the jar of nut butters and you’ll notice that since they are 100% natural, oil separation is normal. Mix well with a spoon until it has a smooth, creamy texture.

- In a bowl, combine the drained chickpeas with the grated carrots and quartered cherry tomatoes.
- In another container, combine cashew cream, lemon, evaporated water, salt, and pepper. It should resemble a creamy vinaigrette.
- Pour over a bowl and mix. Taste and adjust salt, pepper, or lemon.

- Briefly sauté the mushrooms in a little oil and salt and allow to cool.
- In a bowl, combine the nut cream with the soy, lime juice, chopped cilantro, and a little water until it forms a shiny, creamy sauce.
- Add mushrooms, peeled and sliced cucumbers, and chopped red cabbage to the bowl. Add sauce and mix.

- Place peeled and diced apples, peeled and diced figs, and diced feta cheese in a bowl.
Install
- Place the opened lettuce leaves on a plate.
- Fill with 2-3 tablespoons of each mixture.
- Top it off with the toppings: a little chopped chives for a Mediterranean twist, extra cilantro for a Thai twist and gourmet pistachio cream.
- And serve directly. Eat with your hands, folding the leaves like a “boat.”

Variations for each type of lettuce
- Mediterranean: Add chopped cucumber or olives, or fresh herbs like parsley or mint.
- Thailand: Swap mushrooms for golden tofu or hera. Add grated ginger or spicy Sriracha sauce.
- Gourmet: Substitute grapes or pears for figs. Swap the feta cheese for soft goat cheese. Add arugula for an extra green touch.
Tips for these salad ssam
- If you have leftover mixture, you can keep it in the refrigerator for 2-3 days, and always put only the mixture on top of the lettuce that you want to eat immediately.
- If the dressing is a little thick, don’t be afraid to add water and mix until you reach the desired texture.
